How to Cook  Sous Vide Roast Beef

Sous vide roast beef is a great way to make even the most economic cuts of beef tender, juicy, and flavorful.

Ingredients

SOUS VIDE ROAST BEEF

3 LB BEEF CUT HUNK (E.G. CHUCK, EYE OF ROUND, TOP ROUND, TRI-TIP) 4 TBSP OLIVE OIL 3 SPRIGS FRESH ROSEMARY 6 GARLIC CLOVES 3 OUNCES BUTTER

Step 1

Set your sous vide to 130°F — the perfect temp for a pink center.

Place the beef, rosemary, garlic, and olive in the bag, and vacuum seal.

Step 2

Place your sealed bag in the sous vide bath and cook for about 21 hours.

Step 3

Remove beef from liquid and pat dry for searing. 

Pre-heat a cast-iron skillet on medium-high  for 5+ minutes. Melt the butter with a minute left on the pre-heat.

Step 4

Place the roast beef on the hot skillet, searing in butter for 20-30 seconds per side until all sides are golden brown.

Step 5

Season with salt as desired and enjoy!   No rest needed. Just be sure to use a sharp knife — and cut against the grain.
