Top sous vide 

SOUS VIDE  ASPARAGUS:  Tender, Bright, Crisp

Sous vide isn’t just for protein. It's great for vegetables with a narrow window between underdone and overdone.  Asparagus is PERFECT for sous vide.

Ingredients

1 Bunch Asparagus, trimmed 2 TBSP butter or olive oil 1 tsp salt 1/2 TSP PEPPER  1/2 LEMON (OPTIONAL)

Step 1

Set your sous vide to 185°F. 

Bag the asparagus with butter, salt, and pepper. Vacuum seal the bag.

Step 2

Place the sealed back in the sous vide bath and cook for 12 mins.

Step 3

Remove asparagus from the bag and either serve with a squeeze of lemon and salt to taste, or...

Step 4

Put some char on it from a grill or searing torch and then finish with a squeeze of lemon and salt.
