Top sous vide 

SOUS VIDE  BROCCOLINI:  Tender, Bright, Crisp

Sous vide isn’t just for protein. It's a great way to nail vegetables with a narrow window between underdone and overdone.  Broccolini is PERFECT for sous vide.

Ingredients

2 bunches broccolini 2 TBSP OLIVE OIL 2 CLOVES GARLIC 1/2 TSP RED PEPPER FLAKES (OPTIONAL) 1/2 LEMON 1 OZ PARMESAN CHEESE, FRESHLY GRATED

Step 1

Set your sous vide to 180°F. 

Bag the broccolini and vacuum seal the bag.

Step 2

Place the sealed back in the sous vide bath and cook for 25 mins.

Step 3

Remove broccolini from the bag and either serve directly with a squeeze of lemon and freshly grated parmesan cheese, or…

Step 4

Cook the garlic and chili flakes in olive oil until fragrant. Pat dry the broccolini and add to the pan.  Toss over medium high heat for about 30 seconds.

Step 5

Then plate and add a squeeze of lemon and freshly grated parmesan cheese. Enjoy!
