Sous Vide Vegetables

Sous vide vegetables mimic traditional cooking methods more so than how sous vide is typically used. That is, you aren’t cooking vegetables at the desired internal temperature of the vegetables. You’re cooking them at a higher temp for a more precise time to reach the desired texture of your vegetables.
